Organic, extra virgin, cold pressed coconut oil seems to be coming up as a miracle food in so much that I am hearing and reading lately. It seems to be good for women, especially with thyroid problems, and men, and in so many other areas too. It is one of the few oils that is OK to cook with, not changing properties, when heated, into a ‘bad’ oil. I have tried this for my stir fry veggies, but it has a very strong coconut flavour, which my family did not like. I have used it in my homemade granola though, and we enjoyed it there. My sister has been taking a teaspoon a day for a while now, so I am keen to hear her feedback, with regards to her thyroid levels, as we both have Hashimoto’s disease, and borderline high cholesterol. I also know a few other people who take it daily for medicinal purposes. Coconut oil has had a bad rap in the past with regards to cholesterol levels, but apparently this has proven to be false. So I will update you on this, as the results come through. If anyone out there has any experience with this product please let me know.
